For the Marinade:

  • 1 1/2 lbs boneless, skinless chicken thighs or breasts (cut into 1.5-inch pieces)
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha (or more to taste)
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • 2 garlic cloves (minced)
  • 1/2 teaspoon ground black pepper

For Serving:

  • Lime wedges
  • Chopped cilantro

Instructions

  1. In a medium bowl, prepare the marinade: Whisk together honey, soy sauce, sriracha, lime juice, olive oil, garlic, and black pepper.
  2. Marinate the chicken: Add the chicken pieces to the marinade, toss to coat well. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat the grill: Set it to medium-high heat.
  4. Skewer the chicken: Thread marinated chicken onto skewers.
  5. Grill the chicken: Cook for 4–5 minutes per side until charred and cooked through (165°F internal temperature).
  6. Serve: Hot, garnished with lime wedges and cilantro.

  • Soak wooden skewers in water for 30 minutes to prevent burning.
  • This recipe can also be prepared under a broiler or on a grill pan.
