Chicken:

  • 4 boneless, skinless chicken breasts

Honey Mustard Sauce:

  • ¼ cup Dijon mustard
  • ¼ cup honey
  • 2 tablespoons whole grain mustard (optional)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon apple cider vinegar or lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Garnish:

  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Prepare the Honey Mustard Sauce: In a small bowl, whisk together Dijon mustard, honey, whole grain mustard, olive oil, garlic, vinegar or lemon juice, salt, and pepper until smooth.
  2. Marinate the Chicken: Place chicken breasts in a shallow dish or zip-top bag and pour half of the honey mustard mixture over them. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  3. Bake the Chicken: Preheat oven to 375°F. Remove chicken from marinade and place in a greased baking dish. Spoon the remaining honey mustard sauce over the top. Bake uncovered for 25–30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  4. Rest and Serve: Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley if desired.
