  • 1/3 cup melted coconut oil or unsalted butter
  • 2 large eggs, room temperature
  • 1/4 cup plain Greek yogurt or sour cream
  • 1 teaspoon vanilla extract

Optional:

  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together whole wheat flour, baking soda, salt, and cinnamon.
  3. Mix Wet Ingredients: In a large bowl, combine mashed bananas, honey, melted coconut oil, eggs, Greek yogurt, and vanilla extract.
  4. Combine and Bake: Gently fold the dry ingredients into the wet ingredients until just combined. Add nuts if desired. Pour batter into the prepared pan and bake for 50-60 minutes.
