Instructions

  2. Prepare the Blood Orange Juice: In a saucepan over low heat, warm the blood orange juice until hot but not boiling. Stir in the bloomed gelatin until fully dissolved, then cool to room temperature.
  3. Whip the Mousse: In a large mixing bowl, beat the chilled coconut milk, heavy cream, honey, vanilla, and salt until soft peaks form. Fold in the blood orange zest and cooled juice-gelatin mixture.
  4. Chill and Serve: Spoon the mousse into serving glasses and chill for at least 3 hours until set. Garnish with blood orange segments and toasted coconut flakes before serving.
