Description

Instructions

  1. Sauté vegetables: Preheat the oven to 400°F (200°C). In a saucepan, heat olive oil over medium-high heat. Add diced onion, red bell pepper, and jalapeño; sauté until the vegetables are tender and fragrant, about 5-7 minutes.
  2. Combine ingredients: In a large mixing bowl, combine the sautéed vegetables with drained corn, softened cream cheese, sour cream, 1 cup of shredded Colby Jack cheese, chili powder, garlic powder, paprika, salt, and pepper. Stir the mixture thoroughly until all ingredients are evenly incorporated and creamy.
  3. Bake: Transfer the mixture into a 2-quart casserole dish or a small oven-safe skillet, spreading it out evenly. Sprinkle the remaining 1 cup of Colby Jack cheese evenly over the top. Place the dish in the preheated oven and bake for 15-20 minutes, or until the dip is hot, bubbly, and the cheese is melted and golden brown on top.
  4. Serve: Remove from the oven and garnish with sliced green onions. Serve immediately while hot, alongside tortilla chips or crackers for dipping.

Notes

  • You can adjust the heat by adding more or less jalapeño depending on your preference.
