Ingredients:

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/4 cup fresh lemon juice (about 1 large lemon)
  • 1/4 cup well-stirred tahini
  • 1 small garlic clove, minced
  • 2 tablespoons extra-virgin olive oil, plus more for serving
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 2 to 3 tablespoons cold water
  • paprika and chopped fresh parsley for garnish (optional)

Instructions

  1. In a food processor, combine the tahini and lemon juice and process for 1 minute until smooth and creamy.
  2. Add the minced garlic, olive oil, cumin, and salt and process for another 30 seconds.
  3. Add the chickpeas and process for about 1 minute, scraping down the sides as needed, until thick and smooth.
  4. With the processor running, slowly add 2 to 3 tablespoons of cold water until the hummus reaches your desired consistency.
  5. Taste and adjust seasoning as needed.
  6. Transfer to a serving bowl, drizzle with extra olive oil, and sprinkle with paprika and chopped parsley if desired.
  7. Serve with pita bread, fresh vegetables, or crackers.

Notes

  • For an ultra-smooth hummus, peel the skins off the chickpeas before blending.
