- Mix Dry Ingredients: In a large bowl, combine cornmeal, flour, sugar, baking powder, baking soda, salt, black pepper, and cayenne pepper. Add chopped onion.
- Prepare Wet Ingredients: In another bowl, whisk egg and buttermilk. Combine with dry ingredients until just mixed.
- Fry: Heat oil to 350°F (175°C). Drop spoonfuls of batter into the oil. Fry for 2-3 minutes until golden brown. Drain on paper towels.
- Serve: Enjoy warm with optional additions or dipping sauces.
