  • 1 pound dried black beans, rinsed and picked over
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (add after cooking)
  • 1/2 teaspoon black pepper
  • 6 cups water or low-sodium vegetable broth
  • juice of 1 lime
  • chopped fresh cilantro for garnish (optional)

Instructions

  1. Add Ingredients: Add the rinsed black beans, diced onion, minced garlic, bay leaf, ground cumin, smoked paprika, black pepper, and water or broth to the Instant Pot. Stir to combine.
  2. Cook: Secure the lid and set the valve to Sealing. Cook on High Pressure for 35 minutes.
  3. Release Pressure: Allow the pressure to release naturally for 20 minutes, then carefully release any remaining pressure.
  4. Finish: Remove the bay leaf. Stir in the salt and lime juice. Taste and adjust seasoning if needed.
  5. Serve: Serve warm, garnished with fresh cilantro if desired.

Notes

  • No soaking is required, but for softer beans, you can soak them for 4 hours and reduce the cook time to 20 minutes.
  • Leftover beans can be stored in an airtight container in the refrigerator for up to 5 days or frozen for up to 3 months.
