Chicken Thighs:

  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder

Peri Peri Sauce:

  • 1 cup peri peri sauce (store-bought or homemade)
  • 1/4 cup water

Garnish:

  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. Season and Sear Chicken: Pat dry and season chicken thighs. Sear in Instant Pot in batches.
  2. Prepare Sauce: Deglaze pot with water, add peri peri sauce, and return chicken to pot.
  3. Cook: Pressure cook for 10 minutes, then natural release for 5 minutes.
  4. Crisp and Serve: Optionally broil chicken, spoon sauce over, and garnish with herbs.
