Pork Carnitas:

  • 3 lbs pork shoulder (boneless), cut into large chunks
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 1/2 cup chicken broth

Instructions

  1. Sear Pork: Set the Instant Pot to sauté mode and heat the olive oil. Sear pork chunks on all sides until browned. Remove and set aside.
  2. Sauté Aromatics: Sauté onion and garlic in the pot, then add oregano, cumin, chili powder, salt, and pepper.
  3. Cook: Return pork to the pot with orange juice, lime juice, and chicken broth. Pressure cook for 45 minutes, then natural release for 15 minutes.
  4. Shred and Crisp: Shred the pork and broil for crispy edges.
