Bone-In Beef Short Ribs:
- 3 pounds bone-in beef short ribs
Seasoning:
- Salt and black pepper to taste
Others:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1/2 cup red wine
- 2 tablespoons Worcestershire sauce
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
Instructions
- Season and Sear: Season short ribs with salt and pepper. Sear in Instant Pot until browned. Set aside.
- Sauté Aromatics: Sauté onion, garlic, and tomato paste. Add beef broth and red wine, scraping up browned bits.
- Cook: Add Worcestershire sauce, thyme, rosemary, and short ribs. Pressure cook for 45 minutes.
- Finish: Allow pressure release, then remove ribs. Thicken sauce if desired.

- For a thicker sauce, use a cornstarch slurry.
- Pair with mashed potatoes, polenta, or roasted vegetables.
