Smoked Sausage:

  • 1 pound smoked sausage, sliced into 1/2-inch rounds

Lentils:

  • 1 cup dried brown or green lentils, rinsed

Vegetables:

  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced

Other:

  • 1 (14.5-ounce) can diced tomatoes with juices
  • 6 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 bay leaf
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Sauté Smoked Sausage: Set the Instant Pot to sauté mode and add olive oil. Cook the sliced smoked sausage until lightly browned. Remove and set aside.
  2. Cook Vegetables: Sauté onion, carrots, and celery until softened. Add garlic and cook until fragrant.
  3. Combine Ingredients: Return the sausage to the pot, add lentils, tomatoes, broth, herbs, salt, and pepper. Stir to combine.
  4. Pressure Cook: Close the lid and cook on manual high pressure for 15 minutes. Allow natural pressure release for 10 minutes, then quick release.
  5. Finish and Serve: Remove bay leaf, adjust seasoning if needed, and serve hot, garnished with parsley.
