Chicken:

  • 2 pounds boneless, skinless chicken thighs

Teriyaki Sauce:

  • ½ cup low-sodium soy sauce
  • ¼ cup water
  • ¼ cup honey
  • 3 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated

Thickening Agent:

  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Garnish:

  • sesame seeds and sliced green onions

Instructions

  1. Place the Chicken: Put the chicken thighs in the Instant Pot.
  2. Mix the Sauce: Combine soy sauce, water, honey, rice vinegar, brown sugar, sesame oil, garlic, and ginger in a bowl. Pour over the chicken.
  3. Cook: Seal the Instant Pot and cook on high pressure for 10 minutes. Let pressure release naturally for 5 minutes, then quick release.
  4. Thicken Sauce: Shred or slice the chicken. Switch to sauté mode, add cornstarch slurry, and cook until thickened.
  5. Finish: Return chicken to the pot, coat in sauce. Garnish with sesame seeds and green onions. Serve hot.
