Instructions

  1. Sauté Aromatics: In a large pot, melt the butter with olive oil over medium heat. Add the chopped onion and sauté for 3–4 minutes until soft and translucent. Stir in the minced garlic and cook for another minute to release its flavor.
  2. Cook Cabbage: Add the sliced cabbage to the pot and cook, stirring occasionally, until it begins to wilt and soften, about 5 minutes. This step helps mellow the cabbage’s flavor and makes it tender.
  3. Add Potatoes and Broth: Stir in the diced potatoes, salt, pepper, and pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 15–20 minutes, or until the potatoes are very tender and cooked through.
  4. Blend the Soup: Use an immersion blender to partially blend the soup directly in the pot, leaving some chunks for texture. Alternatively, transfer half of the soup to a blender, puree it, and return it to the pot. This creates a creamy but chunky consistency.
  5. Finish Soup: Stir in the whole milk or cream and gently heat the soup through without bringing it to a boil. Taste and adjust the seasoning with additional salt and pepper as needed.
  6. Serve: Ladle the warm soup into bowls and garnish with sliced green onions, chopped parsley, and optionally, crumbled cooked bacon to add flavor and texture.
