Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and prepare a 12-cup muffin tin with liners or by greasing lightly.
- Prepare Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Mix Wet Ingredients: In a small bowl, whisk together the buttermilk and egg. Pour the wet ingredients into the dry and stir until just combined.
- Add Mix-Ins: Fold in the currants or raisins and caraway seeds if using.
- Bake: Divide the batter among the muffin cups and bake for 18–22 minutes until golden and a toothpick inserted comes out clean.
- Cool and Serve: Allow the muffins to cool slightly before serving.
