Marinade:

  • 2 pounds boneless skinless chicken thighs
  • 3 tablespoons plain Greek yogurt
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • juice of 1 lemon
  • 2 teaspoons ground cumin
  • 2 teaspoons ground paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional, for heat)

Serving:

  • warm pita bread
  • sliced tomatoes
  • cucumbers
  • red onions
  • lettuce
  • tahini or garlic sauce for serving

Instructions

  1. Prepare Marinade: In a large bowl, whisk together Greek yogurt, olive oil, garlic, lemon juice, cumin, paprika, coriander, turmeric, cinnamon, black pepper, salt, and cayenne if using. Add chicken thighs and coat well. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.
  2. Cook Chicken: Preheat oven to 425°F or heat a grill pan over medium-high heat. Arrange chicken on a lined baking sheet or grill and cook for 20–25 minutes, turning halfway, until golden brown and fully cooked (internal temperature 165°F). Let rest for 5 minutes, then slice thinly.
  3. Assemble Shawarma: Serve the sliced chicken in warm pita bread with tomatoes, cucumbers, onions, and lettuce, drizzled with tahini or garlic sauce.
