Description
This Irresistible Rotel Dip is a crowd-pleasing appetizer that combines ground beef, melted Velveeta cheese, and zesty Rotel tomatoes with green chilies for a flavorful and creamy dip. Perfect for parties and gatherings!
Ingredients
Ground Beef:
1 pound,
Processed Cheese (such as Velveeta):
16 ounces, cut into cubes,
Diced Tomatoes with Green Chilies (like Rotel):
1 can (10 ounces), undrained,
Garlic Powder:
1/2 teaspoon,
Onion Powder:
1/2 teaspoon,
Optional:
Sliced jalapeños or chopped cilantro for garnish
Instructions
- Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it apart with a spatula as it cooks. Drain any excess grease.
- Melt Cheese and Add Tomatoes: Add the cubed processed cheese and the entire can of diced tomatoes with green chilies to the skillet. Stir to combine. Cook over low heat until the cheese is completely melted and the dip is smooth and heated through.
- Season and Serve: Stir in garlic powder and onion powder. Transfer the dip to a serving dish or a slow cooker set to warm. Garnish with jalapeños or cilantro if desired. Serve warm with tortilla chips, crackers, or veggies.
Notes
- For a spicier version, use hot Rotel or add a dash of cayenne pepper.
- You can substitute ground sausage for the beef or use a combination of both for extra flavor.
- To keep the dip warm for a party, use a slow cooker on the warm setting.
