For Fried Green Tomatoes:
- 4 medium green tomatoes (sliced 1/4-inch thick)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/2 cup buttermilk
- 1 cup cornmeal
- 1/2 cup breadcrumbs (preferably panko)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- Vegetable oil (for frying)
Instructions
- Prepare Tomatoes: Lay sliced green tomatoes on a paper towel-lined surface. Sprinkle both sides with salt and let sit for 15 minutes to draw out moisture. Pat dry before breading.
- Breading Station: Set up three shallow bowls. In the first bowl, place seasoned flour. In the second, whisk together eggs and buttermilk. In the third, mix cornmeal, breadcrumbs, garlic powder, and paprika.
- Coating: Dredge tomato slices in flour, then egg mixture, and finally cornmeal-breadcrumb mixture. Press gently to help coating stick.
- Frying: Heat vegetable oil in a skillet. Fry tomatoes in batches for 2–3 minutes per side until golden brown and crispy. Drain on paper towels.
- Serve: Enjoy hot with your favorite dipping sauce.

- For an extra-crispy finish, double-dip the tomatoes in the egg and cornmeal mixture.
- Use a cast iron skillet for even frying.
