Instructions

  1. Prepare Tomatoes: Lay sliced green tomatoes on a paper towel-lined surface. Sprinkle both sides with salt and let sit for 15 minutes to draw out moisture. Pat dry before breading.
  2. Breading Station: Set up three shallow bowls. In the first bowl, place seasoned flour. In the second, whisk together eggs and buttermilk. In the third, mix cornmeal, breadcrumbs, garlic powder, and paprika.
  3. Coating: Dredge tomato slices in flour, then egg mixture, and finally cornmeal-breadcrumb mixture. Press gently to help coating stick.
  4. Frying: Heat vegetable oil in a skillet. Fry tomatoes in batches for 2–3 minutes per side until golden brown and crispy. Drain on paper towels.
