Coconut Cream Filling:

  • 1 can (14 oz) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 1 1/2 cups shredded sweetened coconut, divided
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Garnish:

  • toasted coconut or crushed pineapple (optional)

Instructions

  1. Prepare the Crust: Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a 9×9-inch dish and bake for 8–10 minutes. Cool.
  2. Make the Filling: Beat cream cheese until smooth. Add condensed milk, extracts, and 1 cup coconut. Mix well.
  3. Whip the Cream: In a separate bowl, whip cream with powdered sugar until stiff peaks form. Fold into coconut mixture.
  4. Assemble: Spread filling over crust, top with remaining coconut. Add garnish if desired.
  5. Chill: Refrigerate for at least 4 hours. Slice and serve chilled.
