Graham Cracker Crust:
- 1 1/2 cups graham cracker crumbs

- 1/2 cup unsalted butter, melted
Coconut Cream Filling:
- 1 package (8 oz) cream cheese, softened
- 1 can (14 oz) sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon coconut extract
- 1 1/2 cups shredded sweetened coconut, divided
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Garnish:
- toasted coconut or crushed pineapple (optional)
Instructions
- Prepare the Crust: Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a 9×9-inch dish and bake for 8–10 minutes. Cool.
- Make the Filling: Beat cream cheese until smooth. Add condensed milk, extracts, and 1 cup coconut. Mix well.
- Whip the Cream: In a separate bowl, whip cream with powdered sugar until stiff peaks form. Fold into coconut mixture.
- Assemble: Spread filling over crust, top with remaining coconut. Add garnish if desired.
- Chill: Refrigerate for at least 4 hours. Slice and serve chilled.
Notes
- For extra tropical flavor, add a layer of crushed pineapple between crust and filling.
- Use a 9×13 pan for thinner bars, adjusting amounts accordingly.
