- 1/4 cup pepperoncini peppers (sliced)
- 1/3 cup deli meats (such as salami or ham, chopped)
- 1/4 cup provolone cheese (diced or shredded)
- 2 tablespoons grated Parmesan cheese
For the Dressing:
- 1/4 cup mayonnaise
- 2 tablespoons red wine vinegar
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Salt to taste
Instructions
- Main Salad: In a large bowl, combine the chicken, romaine, cherry tomatoes, red onion, pepperoncini, deli meats, provolone, and Parmesan.
- For the Dressing: In a separate small bowl, whisk together the mayonnaise, red wine vinegar, olive oil, Dijon mustard, Italian seasoning, garlic powder, black pepper, and salt until smooth.
- Pour the dressing over the salad and toss until everything is well coated.
- Serve immediately, or refrigerate for up to 1 day before serving.
