  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can white beans (cannellini or Great Northern, drained and rinsed)
  • 2 cups low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 cups baby spinach or chopped kale (optional)
  • Grated Parmesan and chopped parsley for garnish

Instructions

  1. Cook Sausage: In a large pot, brown Italian sausage in olive oil until cooked through. Set aside.
  2. Sauté Vegetables: In the same pot, sauté onion, carrots, and celery until softened. Add garlic and cook until fragrant.
  3. Add Ingredients: Stir in diced tomatoes, white beans, broth, oregano, thyme, red pepper flakes, salt, and pepper. Return sausage to the pot.
  4. Simmer: Let the stew simmer for 15–20 minutes to meld flavors.
