  • pounds sirloin steak, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter, divided
  • 4 garlic cloves, minced
  • Salt and pepper, to taste

For the Smoky Chipotle Cream Cheese Pasta:

  • 8 oz penne or rigatoni pasta
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 12 chipotle peppers in adobo sauce, minced
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Cook the Pasta: Boil salted water and cook pasta as per package instructions. Drain and set aside.
  2. Prepare the Steak Bites: Sear seasoned steak in a hot skillet with olive oil and 2 tbsp butter. Add garlic, cook briefly, then set aside.
  3. Make the Creamy Sauce: In the same skillet, melt remaining butter and mix in cream cheese, heavy cream, chipotle peppers, Parmesan, and smoked paprika until creamy.
  4. Combine and Serve: Add pasta to the sauce, toss to coat. Return steak bites to the pan, gently mix or serve over the pasta. Garnish with parsley.
