Description

For the chicken:

  • 1 1/2 pounds boneless skinless chicken thighs or breasts
  • 3 tablespoons olive oil
  • juice of 1 lemon
  • 3 cloves garlic (minced)
  • 1 tablespoon plain Greek yogurt
  • 1 tablespoon red wine vinegar
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the tzatziki:

  • 1 cup plain Greek yogurt
  • 1/2 English cucumber (grated and squeezed dry)
  • 1 clove garlic (minced)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • salt and pepper to taste

For serving:

  • 4–6 warm pita breads
  • sliced tomatoes
  • shredded lettuce
  • sliced red onion
  • crumbled feta cheese
  • fresh parsley (optional)

Instructions

  1. Marinate the chicken: In a large bowl or zip-top bag, combine olive oil, lemon juice, garlic, Greek yogurt, red wine vinegar, oregano, salt, and pepper. Add chicken and toss to coat. Marinate in the fridge for at least 1 hour, preferably 4–6 hours.
  2. Make the tzatziki: Combine Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, salt, and pepper in a bowl. Mix well and refrigerate until ready to use.
  3. Cook the chicken: Heat a grill, grill pan, or skillet over medium-high heat. Cook the marinated chicken for 5–6 minutes per side, or until fully cooked and slightly charred. Let rest for a few minutes, then slice into strips.
  4. Assemble the gyros: Warm the pita bread and layer sliced chicken, lettuce, tomatoes, red onion, and feta. Drizzle generously with tzatziki and garnish with parsley if desired. Serve immediately.

  • For added flavor, sprinkle sumac or smoked paprika over the gyros before serving.
