Ingredients
Scale
For the chicken:
- 1 1/2 pounds boneless skinless chicken thighs or breasts
- 3 tablespoons olive oil
- juice of 1 lemon
- 3 cloves garlic (minced)
- 1 tablespoon plain Greek yogurt
- 1 tablespoon red wine vinegar
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the tzatziki:
- 1 cup plain Greek yogurt
- 1/2 English cucumber (grated and squeezed dry)
- 1 clove garlic (minced)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill
- salt and pepper to taste
For serving:
- 4–6 warm pita breads
- sliced tomatoes
- shredded lettuce
- sliced red onion
- crumbled feta cheese
- fresh parsley (optional)
Instructions
- Marinate the chicken: In a large bowl or zip-top bag, combine olive oil, lemon juice, garlic, Greek yogurt, red wine vinegar, oregano, salt, and pepper. Add chicken and toss to coat. Marinate in the fridge for at least 1 hour, preferably 4–6 hours.
- Make the tzatziki: Combine Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, salt, and pepper in a bowl. Mix well and refrigerate until ready to use.
- Cook the chicken: Heat a grill, grill pan, or skillet over medium-high heat. Cook the marinated chicken for 5–6 minutes per side, or until fully cooked and slightly charred. Let rest for a few minutes, then slice into strips.
- Assemble the gyros: Warm the pita bread and layer sliced chicken, lettuce, tomatoes, red onion, and feta. Drizzle generously with tzatziki and garnish with parsley if desired. Serve immediately.
