Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
Sauce
- 2 fresh peaches, pitted and diced
- 1–2 jalapeños, seeded and finely chopped
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon soy sauce
- 2 garlic cloves, minced
- 1 tablespoon fresh lime juice
- 1 tablespoon butter
Garnish
- 2 tablespoons chopped fresh cilantro
Instructions
- Season the Chicken: Season both sides of the chicken breasts with salt and pepper to taste, ensuring even coverage for optimal flavor.
- Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5 to 6 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside to keep warm.
- Prepare the Sauce Base: In the same skillet, add the butter. Once melted, stir in the minced garlic, chopped jalapeños, and diced peaches. Cook for 2 to 3 minutes until fragrant and until the peaches start to soften, releasing their juices.
- Add Flavorings: Stir in the honey, apple cider vinegar, Dijon mustard, soy sauce, and fresh lime juice. Mix thoroughly to combine all ingredients and bring the mixture to a gentle simmer.
- Simmer the Sauce: Let the sauce simmer for 3 to 4 minutes, allowing it to thicken slightly and intensify in flavor.
- Combine Chicken and Sauce: Return the cooked chicken breasts to the skillet. Spoon the sauce over the chicken to coat it fully. Simmer for an additional 2 minutes to let the chicken absorb the flavors.
- Garnish and Serve: Remove from heat and garnish the dish with chopped fresh cilantro. Serve immediately for the best taste experience.
Notes
- For extra heat, leave the jalapeño seeds in when chopping.
- This recipe pairs wonderfully with rice, quinoa, or grilled vegetables to complete your meal.
- If fresh peaches are out of season, nectarines make a great substitute.
