- 1/2 pound large shrimp, peeled and deveined
- 1 cup cooked chicken breast, cubed
- 1 cup uncooked instant rice
- 1 cup chicken broth
- 1/2 cup canned diced tomatoes, drained
- 1/2 cup green bell pepper, chopped
- 1/2 cup onion, chopped
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- 1 tablespoon olive oil
- Chopped parsley and lemon wedges for garnish (optional)

Divide mixture among four foil pieces. Seal packets tightly. Cook for 18–20 minutes until done. Garnish with parsley and lemon.
