- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Prepare the baking sheet: Line a baking sheet with parchment paper or lightly grease it to prevent sticking and to allow easy removal of the candies once set.
- Make the sugar syrup: In a medium saucepan over medium heat, combine granulated sugar, light corn syrup, water, and salt. Stir the mixture until the sugar dissolves completely, then stop stirring and allow it to come to a boil. Continue boiling until the syrup reaches 260°F (hard ball stage) on a candy thermometer.
- Beat the egg whites: While the syrup heats, use an electric mixer on high speed to beat the egg whites in a large bowl until stiff peaks form, indicating they are well aerated and glossy.
- Combine syrup and egg whites: Once the syrup reaches 260°F, slowly and carefully pour it in a thin stream into the beaten egg whites while continuing to mix on medium-high speed. This ensures the hot syrup is incorporated without scrambling the eggs and helps create the candy’s fluffy texture.
- Add gelatin and vanilla: Immediately add the flavored gelatin powder and vanilla extract to the mixture, then continue beating for 4 to 6 minutes until the mixture thickens, becomes glossy, and holds its shape firmly.
- Fold in nuts: If using, quickly fold the chopped pecans or walnuts into the thick mixture to distribute evenly.
- Form the candies: Working quickly, drop spoonfuls of the candy mixture onto the prepared baking sheet. The mixture will start to set, so speed is important.
- Let set: Allow the candies to cool and set at room temperature for several hours or overnight until firm and ready to enjoy.
