  • 4 green onions, chopped

  • 2 Scotch bonnet peppers, seeded and chopped (or substitute with habanero peppers)
  • 2 tablespoons fresh lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Prepare the Marinade: In a blender or food processor, combine green onions, onion, garlic, ginger, Scotch bonnet peppers, lime juice, soy sauce, brown sugar, thyme, allspice, cinnamon, nutmeg, black pepper, salt, and olive oil. Blend until a smooth marinade forms.
  2. Marinate the Chicken: Place the chicken in a large resealable bag or shallow dish and pour the marinade over the chicken, coating each piece well. Cover and refrigerate for at least 4 hours or overnight for best flavor.
  3. Cook the Chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade and grill for about 6-8 minutes per side, or until the chicken is cooked through and has a nice char. Alternatively, bake at 400°F (200°C) for 35-40 minutes or until fully cooked.
  4. Serve: Let the chicken rest for 5 minutes before serving.
