Description

Keto Philly Cheesesteak Roll Ups are a low-carb, delicious twist on the classic Philly cheesesteak sandwich. Thinly sliced roast beef is sautéed with bell peppers, onions, and mushrooms, then wrapped in provolone cheese slices and baked until bubbly. This recipe is perfect for a quick keto-friendly meal or appetizer that’s packed with savory flavors and satisfying texture.

Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1 pound thinly sliced roast beef
  • 1 medium green bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 cup sliced mushrooms
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 slices provolone cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the roll ups later.
  2. Sauté Vegetables: In a large skillet over medium heat, heat the olive oil. Add the sliced green bell pepper, onion, and mushrooms. Sauté the vegetables for about 5 minutes until they soften and become fragrant.
  3. Add Roast Beef and Season: Add the thinly sliced roast beef to the skillet with the vegetables. Sprinkle the garlic powder, salt, and pepper evenly over the mixture. Stir well and cook for another 3-5 minutes until the beef is warmed through and the vegetables are tender.
  4. Prepare Cheese Slices: Lay out the provolone cheese slices flat on a clean surface, ready to be filled.
  5. Assemble Roll Ups: Place a generous portion of the beef and vegetable mixture onto each slice of provolone cheese.
  6. Roll and Place: Carefully roll each provolone slice tightly around the filling, making sure the filling stays inside. Place each roll seam-side down in a baking dish to prevent them from unrolling during baking.
  7. Bake: Place the baking dish in the preheated oven and bake for 10 minutes until the cheese melts and becomes bubbly.
  8. Serve: Remove the baking dish from the oven and let the roll ups rest for a few minutes before serving. This allows them to set and be easier to handle.

Notes

  • You can substitute roast beef with thinly sliced steak or leftover steak for different textures.
  • Feel free to add other keto-friendly veggies like jalapeños or spinach for extra flavor and nutrients.
  • If you prefer a sharper cheese, try using sharp provolone or even mozzarella for a milder taste.
  • These roll ups are great for meal prepping and can be refrigerated for up to 3 days.
  • Make sure to roll the cheese slices tightly to avoid leaks during baking.
