  • 1 teaspoon lime zest

Topping

  • 45 kiwis, peeled and thinly sliced
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat and prepare crust: Preheat the oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until the mixture resembles wet sand. Press firmly into the bottom and up the sides of a 9-inch tart pan. Bake crust for 8–10 minutes, then cool slightly.
  2. Make filling: In a separate bowl, whisk together sweetened condensed milk, egg yolks, key lime juice, and lime zest until smooth and fully combined.
  3. Bake tart: Pour filling into baked crust and smooth the top. Bake for 15–17 minutes or until the center is just set.
  4. Chill tart: Let the tart cool at room temperature, then refrigerate for at least 3 hours until chilled and set.
  5. Prepare topping: Whip heavy cream with powdered sugar and vanilla extract in a small bowl until soft peaks form.
  6. Assemble and serve: Before serving, arrange sliced kiwi in a circular pattern on the tart. Dollop or pipe whipped cream along the edges as desired.
