Crust
- 1 1/2 cups graham cracker crumbs

- 6 tablespoons unsalted butter, melted
Filling
- 1 can (14 oz) sweetened condensed milk
- 4 large egg yolks
- 1/2 cup key lime juice (fresh or bottled)
- 1 teaspoon lime zest
Topping
- 4–5 kiwis, peeled and thinly sliced
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat and prepare crust: Preheat the oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until the mixture resembles wet sand. Press firmly into the bottom and up the sides of a 9-inch tart pan. Bake crust for 8–10 minutes, then cool slightly.
- Make filling: In a separate bowl, whisk together sweetened condensed milk, egg yolks, key lime juice, and lime zest until smooth and fully combined.
- Bake tart: Pour filling into baked crust and smooth the top. Bake for 15–17 minutes or until the center is just set.
- Chill tart: Let the tart cool at room temperature, then refrigerate for at least 3 hours until chilled and set.
- Prepare topping: Whip heavy cream with powdered sugar and vanilla extract in a small bowl until soft peaks form.
- Assemble and serve: Before serving, arrange sliced kiwi in a circular pattern on the tart. Dollop or pipe whipped cream along the edges as desired.

- You can substitute key lime juice with regular lime juice if needed.
- For added texture, sprinkle shredded coconut or chopped pistachios over the kiwi topping.
