For the shells:

  • 1 cup powdered sugar
  • 3/4 cup almond flour (finely ground and sifted)
  • 2 large egg whites (room temperature)
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • green gel food coloring (optional)

For the filling:

  • 1/2 cup unsalted butter (softened)
  • 1 1/4 cups powdered sugar
  • 2 tablespoons key lime juice
  • 1 teaspoon key lime zest
  • pinch of salt

Instructions

  1. Prepare the shells: Line baking sheets with parchment paper. Process powdered sugar and almond flour, sift, and set aside. Beat egg whites with cream of tartar and sugar until stiff peaks form. Fold in food coloring and dry ingredients.
  2. Pipe and bake: Pipe rounds onto baking sheets and tap to remove air bubbles. Rest until dry. Bake at 300°F (150°C) for 14-16 minutes.
  3. Make the filling: Beat butter until smooth. Add sugar, lime juice, zest, and salt. Pipe onto shells and sandwich together.
  4. Chill: Refrigerate filled macarons for 24 hours before serving.
