For the Macaron Shells:

  • 1 cup powdered sugar
  • 3/4 cup almond flour
  • 2 large egg whites, room temperature
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lime zest
  • a few drops green food coloring (optional)

For the Filling:

  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 2 tablespoons key lime juice
  • 1 teaspoon lime zest

Instructions

  1. Prepare the Macaron Shells: Line baking sheets with parchment paper. Pulse powdered sugar and almond flour, sift into a bowl. Beat egg whites with cream of tartar and sugar until stiff peaks. Fold in vanilla, lime zest, and food coloring. Pipe batter onto sheets and let dry.
  2. Bake: Preheat oven to 300°F (150°C) and bake for 14–16 minutes. Cool completely.
  3. Make the Filling: Beat butter until fluffy. Add powdered sugar, lime juice, and zest; beat until smooth.
  4. Assemble: Pipe filling onto shells, then sandwich with remaining shells. Refrigerate before serving.
