Chicken Mixture:
- 3 cups cooked shredded chicken
- 2 tablespoons butter
- 1 medium onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
Sauce:
- 1 (10.5-ounce) can cream of chicken soup
- 1 (10.5-ounce) can cream of mushroom soup
- 1 (10-ounce) can diced tomatoes with green chiles (such as Rotel)
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Salt and black pepper to taste
Additional:
- 12 corn tortillas, cut into quarters
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Chopped fresh cilantro for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F.
- Sauté vegetables: In a large skillet, melt the butter over medium heat. Add the onion and bell pepper, sauté until softened. Stir in garlic.
- Prepare sauce: Add cream of chicken soup, cream of mushroom soup, diced tomatoes with green chiles, chili powder, cumin, salt, and pepper. Heat through.
- Layer ingredients: In a 9×13-inch baking dish, layer tortilla quarters, chicken, sauce, and cheeses. Repeat layers.
- Bake: Cover with foil and bake for 25 minutes. Uncover and bake for another 10 minutes until cheese is melted.
- Serve: Garnish with cilantro and serve warm.
