A comforting and flavorful Tex-Mex dish, King Ranch Chicken Casserole is a classic recipe that layers tender chicken, creamy soups, cheese, and tortillas for a satisfying meal that the whole family will love.

Chicken Mixture:

  • 3 cups cooked shredded chicken
  • 2 tablespoons butter
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced

Sauce:

  • 1 (10.5-ounce) can cream of chicken soup
  • 1 (10.5-ounce) can cream of mushroom soup
  • 1 (10-ounce) can diced tomatoes with green chiles (such as Rotel)
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste

Additional:

  • 12 corn tortillas, cut into quarters
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F.
  2. Sauté vegetables: In a large skillet, melt the butter over medium heat. Add the onion and bell pepper, sauté until softened. Stir in garlic.
  3. Prepare sauce: Add cream of chicken soup, cream of mushroom soup, diced tomatoes with green chiles, chili powder, cumin, salt, and pepper. Heat through.
  4. Layer ingredients: In a 9×13-inch baking dish, layer tortilla quarters, chicken, sauce, and cheeses. Repeat layers.
  5. Bake: Cover with foil and bake for 25 minutes. Uncover and bake for another 10 minutes until cheese is melted.
  6. Serve: Garnish with cilantro and serve warm.
