Description

These Korean BBQ Yum Yum Rice Bowls are a flavorful and satisfying meal option that combines marinated beef with a variety of fresh vegetables, rice, and a delicious Yum Yum sauce.

Ingredients

Scale

Marinated Beef:

  • 1 pound thinly sliced beef ribeye or sirloin
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 garlic cloves minced
  • 1 teaspoon grated fresh ginger

Additional Ingredients:

  • 4 cups cooked white rice
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 1 cup kimchi
  • 2 green onions sliced
  • 1 tablespoon sesame seeds
  • 1/4 cup Yum Yum sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Marinate the Beef: In a bowl, combine soy sauce, brown sugar, sesame oil, rice vinegar, garlic, and ginger. Add sliced beef, toss to coat, and marinate for at least 30 minutes.
  2. Cook the Beef: Heat vegetable oil in a large skillet over medium-high heat. Add marinated beef and cook for 5-7 minutes until browned and cooked through.
  3. Assemble the Bowls: Divide cooked rice among 4 bowls. Top each with cooked beef, shredded carrots, cucumber slices, kimchi, and green onions. Drizzle Yum Yum sauce over the top and sprinkle with sesame seeds. Serve immediately.

Notes

  • You can substitute beef with chicken or tofu for a lighter option.
  • Add extra veggies like sautéed mushrooms or spinach for more flavor and nutrition.
