Ground Turkey Stir-Fry:

  • 1 pound ground turkey
  • 2 tablespoons sesame oil
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame seeds
  • 4 green onions (sliced)
  • 1 cup shredded carrots

For Serving:

  • 1 1/2 cups cooked white or brown rice
  • Optional toppings: cucumber slices, kimchi, fried egg

Instructions

  1. Heat the sesame oil: In a large skillet over medium heat, heat the sesame oil.
  2. Sauté onion: Add the diced onion and sauté until softened, about 3–4 minutes.
  3. Cook aromatics: Stir in garlic and ginger, cooking until fragrant, about 30 seconds.
  4. Cook turkey: Add the ground turkey to the skillet, breaking it up and cooking until browned, about 5–6 minutes.
  5. Make sauce: Mix soy sauce, brown sugar, gochujang, and rice vinegar in a bowl. Pour over turkey and stir to coat evenly.
  6. Add veggies: Add shredded carrots and cook until slightly softened, about 1–2 minutes.
  7. Finish and serve: Remove from heat, stir in green onions and sesame seeds. Serve over warm rice, and top with optional toppings.

Notes

  • Adjust the gochujang for desired heat level.
  • For a low-carb option, serve over cauliflower rice or in lettuce wraps.
  • Ground chicken or beef can be substituted for turkey.
