Ground Turkey Stir-Fry:
- 1 pound ground turkey
- 2 tablespoons sesame oil
- 1 small onion (diced)
- 3 cloves garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 1/4 cup low-sodium soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon rice vinegar
- 1 teaspoon toasted sesame seeds
- 4 green onions (sliced)
- 1 cup shredded carrots
For Serving:
- 1 1/2 cups cooked white or brown rice
- Optional toppings: cucumber slices, kimchi, fried egg
Instructions
- Heat the sesame oil: In a large skillet over medium heat, heat the sesame oil.
- Sauté onion: Add the diced onion and sauté until softened, about 3–4 minutes.
- Cook aromatics: Stir in garlic and ginger, cooking until fragrant, about 30 seconds.
- Cook turkey: Add the ground turkey to the skillet, breaking it up and cooking until browned, about 5–6 minutes.
- Make sauce: Mix soy sauce, brown sugar, gochujang, and rice vinegar in a bowl. Pour over turkey and stir to coat evenly.
- Add veggies: Add shredded carrots and cook until slightly softened, about 1–2 minutes.
- Finish and serve: Remove from heat, stir in green onions and sesame seeds. Serve over warm rice, and top with optional toppings.
Notes
- Adjust the gochujang for desired heat level.
- For a low-carb option, serve over cauliflower rice or in lettuce wraps.
- Ground chicken or beef can be substituted for turkey.
