Assembly

  • 1 medium cucumber, thinly sliced
  • 15 mini pitas (or slider buns if preferred)

Instructions

  1. Prepare the Lamb Patties: In a large bowl, combine the ground lamb, dried rosemary, dried oregano, grated garlic, finely minced onion, kosher salt, egg yolk, breadcrumbs, and 1 teaspoon olive oil. Mix gently until just combined to avoid tough patties. Divide the mixture into 15 equal portions, form each into a ball, then flatten them into small patties sized to fit inside the mini pitas.
  2. Cook the Patties: Heat a large skillet or griddle over medium-high heat and drizzle with 1/2 tablespoon olive oil. Add half of the patties, pressing each down slightly with a spatula for even cooking. Cook each side for about 2 to 3 minutes until golden brown and crispy. Remove and repeat with the remaining patties, adding more oil to the pan as needed.
  3. Make the Dill Greek Yogurt: In a small bowl, combine the Greek yogurt, dried dill, lemon juice, and 1 teaspoon olive oil. Stir well and season with salt and pepper to taste, adjusting flavors as desired.
