Description

Ingredients

Cake:

1 cup unsalted butter, softened; 1 cup granulated sugar; 4 large eggs; 1 teaspoon vanilla extract; 2 cups all-purpose flour; 2 teaspoons baking powder; 1/2 cup whole milk

Chocolate Coating:

3 1/2 cups powdered sugar; 1/3 cup unsweetened cocoa powder; 3/4 cup boiling water; 2 tablespoons unsalted butter, melted

Assembling:

2 1/2 cups desiccated coconut


Instructions

  1. Prepare the Cake: Preheat the oven to 350°F and grease a 9×13-inch baking pan. Cream butter and sugar, add eggs one at a time, mix in vanilla. Combine flour and baking powder. Alternately add dry ingredients and milk to the wet mixture. Bake for 25–30 minutes, then cool and cut into squares.
  2. Make the Coating: Sift powdered sugar and cocoa powder, add boiling water and butter. Dip cake squares in the chocolate mixture, then coat with coconut.

Notes

  • Freezing the cake squares briefly makes them easier to dip.
  • Lamingtons are traditionally served plain, but you can sandwich two with jam or whipped cream for a twist.
