Lasagna Roll Ups:

  • 12 lasagna noodles
  • 15 oz ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach (chopped and sautéed or thawed from frozen and drained)
  • 2 cups marinara sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Cook the noodles: Cook the lasagna noodles according to package directions until al dente. Drain and lay them flat on a parchment-lined surface to prevent sticking.
  3. Prepare the filling: In a medium bowl, mix the ricotta, egg, half of the mozzarella, Parmesan, spinach, Italian seasoning, garlic powder, salt, and pepper until well combined.
  4. Assemble the roll ups: Spread a thin layer of marinara sauce in the bottom of the baking dish. Spread the ricotta filling onto each lasagna noodle, then roll up gently. Place the roll ups seam-side down in the dish.
  5. Bake: Pour the remaining marinara sauce over the roll ups, sprinkle with the remaining mozzarella, cover with foil, and bake for 20 minutes. Uncover and bake for another 10 minutes until bubbly and golden. Let rest for 5 minutes before serving. Garnish with fresh herbs if desired.
