Description

A comforting and hearty soup that captures all the flavors of lasagna in a bowl. This Lasagna Soup is loaded with Italian sausage, tomatoes, herbs, lasagna noodles, and a creamy cheese topping.

Main Soup:

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy), casings removed
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 (28-ounce) can crushed tomatoes
  • 1 (14.5-ounce) can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 6 cups low-sodium chicken or beef broth
  • 8 lasagna noodles, broken into pieces
  • Salt and black pepper to taste

Cheese Topping:

  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Garnish:

  • Fresh basil for garnish (optional)

Instructions

  1. Main Soup: Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned. Add onion, garlic, and tomato paste. Stir in crushed tomatoes, diced tomatoes, basil, oregano, red pepper flakes, and broth. Simmer, then add lasagna noodles. Cook until tender. Season with salt and pepper.
  2. Cheese Topping: In a small bowl, combine ricotta, mozzarella, and Parmesan cheeses.
  3. Ladle hot soup into bowls, top with cheese mixture, and garnish with fresh basil.

  • For a lighter version, use ground turkey or chicken instead of sausage.
