Description

A hearty and comforting soup that captures all the flavors of traditional lasagna in a bowl. This Lasagna Soup is loaded with Italian sausage, bell peppers, lasagna noodles, and a cheesy topping.

Main Soup:

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy) casings removed
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 cups water
  • 8 lasagna noodles, broken into pieces
  • Salt and black pepper to taste

Cheese Topping:

  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil or parsley

Instructions

  1. Prepare the Soup: Heat olive oil in a large pot, cook Italian sausage until browned. Add onion, garlic, and red bell pepper. Stir in oregano, basil, and red pepper flakes. Pour in crushed tomatoes, chicken broth, and water. Simmer and add lasagna noodles. Season with salt and pepper.
  2. Make the Cheese Topping: In a small bowl, mix ricotta, mozzarella, and Parmesan cheese.
  3. Serve: Ladle the soup into bowls, top with cheese mixture, and sprinkle with fresh basil or parsley.
