Description

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

For the filling:

  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • 2/3 cup fresh lemon juice (about 34 lemons)
  • 1 tablespoon lemon zest

For topping:

  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
  2. Make the crust: Cream butter and sugar, add flour and salt, press into pan, and bake until golden.
  3. Prepare the filling: Whisk sugar and flour, add eggs, lemon juice, and zest. Pour over crust and bake until set.
  4. Cool and serve: Cool bars, refrigerate, cut into squares, and dust with powdered sugar.
