Ingredients
Scale
Staples
- 12 ounces fettuccine or linguine pasta
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
Vegetables & Herbs
- 2 medium zucchini (spiralized or thinly sliced)
- 4 cloves garlic (minced)
- 1/2 cup chopped fresh basil
- Extra Parmesan and basil for garnish
Dairy & Citrus
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the fettuccine or linguine pasta according to package directions until al dente. Drain the pasta and set aside.
- Sauté Garlic: In a large skillet over medium heat, warm the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant and golden but not burnt.
- Cook Zucchini: Add the spiralized or thinly sliced zucchini to the skillet. Cook for 3 to 4 minutes, stirring occasionally, until the zucchini is just tender yet still retains some firmness.
- Make Alfredo Sauce: Reduce the heat to low and pour in the heavy cream. Stir well to combine with the zucchini and garlic. Add the grated Parmesan cheese, lemon zest, and fresh lemon juice. Season with salt, black pepper, and crushed red pepper flakes, if using. Stir continuously until the cheese melts completely and the sauce becomes smooth and creamy.
- Toss Pasta in Sauce: Add the drained pasta to the skillet with the sauce. Toss thoroughly to coat the noodles evenly with the creamy lemon basil Alfredo sauce.
- Add Fresh Basil and Serve: Just before serving, stir in the chopped fresh basil for a burst of aromatic freshness. Serve the pasta warm, garnished with extra grated Parmesan cheese and additional basil leaves if desired.
Notes
- For a lighter alternative, substitute half-and-half for heavy cream to reduce the richness.
- Add grilled chicken or shrimp to increase the protein content if desired.
