- 1 cup granola or crushed shortbread cookies

Instructions
- Prepare the Lemon Cream: In a large mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Gently fold in half of the lemon curd to create a light lemon cream.
- Assemble the Parfaits: In serving glasses, layer a spoonful of granola or crushed cookies at the bottom, followed by a layer of lemon cream, a layer of fresh berries, and a small dollop of plain lemon curd. Repeat the layers until the glasses are filled, finishing with berries on top. Garnish with fresh mint leaves if desired.
- Serve: Serve immediately or refrigerate for up to 2 hours before serving.
