For the crust:

  • 1 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 12 tablespoons ice water (as needed)

For the filling:

  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 3 large eggs
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1 tablespoon lemon zest
  • 1/2 cup sour cream
  • 1 cup fresh blueberries

Optional garnish:

  • powdered sugar and extra fresh blueberries

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C).
  2. Make the crust: Combine flour, sugar, and salt in a food processor. Add butter and pulse. Add egg yolk and pulse. Add ice water gradually until dough forms. Press into tart pan and bake.
  3. Prepare the filling: Whisk sugar and flour. Add eggs, lemon juice, and zest. Stir in sour cream. Pour into crust and top with blueberries.
  4. Bake: Bake until set, about 20-25 minutes. Cool and chill before serving.

  • For the best flavor, use fresh lemons and fresh blueberries.
