- 1 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg yolk
- 1–2 tablespoons ice water (as needed)
For the filling:
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 3 large eggs
- 1/2 cup fresh lemon juice (about 2–3 lemons)
- 1 tablespoon lemon zest
- 1/2 cup sour cream
- 1 cup fresh blueberries
Optional garnish:
- powdered sugar and extra fresh blueberries
Instructions
- Preheat oven: Preheat your oven to 350°F (175°C).
- Make the crust: Combine flour, sugar, and salt in a food processor. Add butter and pulse. Add egg yolk and pulse. Add ice water gradually until dough forms. Press into tart pan and bake.
- Prepare the filling: Whisk sugar and flour. Add eggs, lemon juice, and zest. Stir in sour cream. Pour into crust and top with blueberries.
- Bake: Bake until set, about 20-25 minutes. Cool and chill before serving.

- For the best flavor, use fresh lemons and fresh blueberries.
