For the Stir Fry:
- 2 cups cooked orzo pasta
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1/4 cup low-sodium chicken broth
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons soy sauce
- 1 tablespoon honey
- Chopped fresh parsley, for garnish
- Lemon wedges, for serving
Instructions
- Cook the Orzo: Prepare the orzo according to package directions; drain and set aside.
- Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Season chicken with salt, pepper, and oregano. Cook for 5-6 minutes until golden and cooked through.
- Stir Fry: Push chicken to one side of the skillet. Add garlic, bell pepper, zucchini, and broccoli. Sauté for 4-5 minutes until vegetables are tender. Stir in cooked orzo.
- Make the Sauce: In a bowl, whisk together chicken broth, lemon juice, lemon zest, soy sauce, and honey. Pour into the skillet and toss until well combined. Heat through.
- Finish and Serve: Remove from heat. Garnish with parsley and serve with lemon wedges.
