Pasta:
- 12 ounces pasta (such as linguine or penne)
Chicken:
- 2 tablespoons olive oil
- 2 boneless skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper to taste
Sauce:
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- Zest of 1 lemon
- 1/4 cup fresh lemon juice (about 1 lemon)
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Cook the pasta: Boil pasta until al dente, then drain and set aside, saving some pasta water.
- Cook the chicken: Season chicken, cook until golden, then add garlic, red pepper flakes, lemon zest, lemon juice, and chicken broth. Simmer.
- Make the sauce: Add cream and Parmesan. Toss in pasta, add reserved water as needed. Garnish with parsley.
