Pasta:

  • 12 ounces pasta (such as linguine or penne)

Chicken:

  • 2 tablespoons olive oil
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste

Sauce:

  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice (about 1 lemon)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the pasta: Boil pasta until al dente, then drain and set aside, saving some pasta water.
  2. Cook the chicken: Season chicken, cook until golden, then add garlic, red pepper flakes, lemon zest, lemon juice, and chicken broth. Simmer.
  3. Make the sauce: Add cream and Parmesan. Toss in pasta, add reserved water as needed. Garnish with parsley.
