  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1 egg

For the filling:

  • 2 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 eggs
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven and prepare baking dish: Preheat the oven to 350°F (175°C) and grease or line a 9×13-inch baking dish with parchment paper.
  2. Make the crust: In a large bowl, mix the cake mix, melted butter, and 1 egg until a soft dough forms. Press the mixture into the prepared pan to form the crust.
  3. Prepare the filling: Beat the cream cheese until smooth. Add powdered sugar, lemon juice, lemon zest, and 2 eggs. Beat until creamy.
  4. Assemble and bake: Pour the cream cheese mixture over the crust, spread evenly, and bake for 25–30 minutes until set.
  5. Cool and chill: Let the bars cool completely, then refrigerate for at least 2 hours.
  6. Serve: Dust with powdered sugar before slicing and serving, if desired.
