Description

Cream Cheese Frosting:

  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • pinch of salt

Instructions

  1. In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
  2. Add the lemon juice, lemon zest, vanilla extract, and a pinch of salt. Mix until well combined.

  3. Gradually add the powdered sugar, one cup at a time, beating on low speed at first, then increasing to medium-high until the frosting is fluffy and smooth. Scrape down the sides of the bowl as needed.
  4. Once fully mixed, use immediately to frost cakes, cupcakes, or cookies, or refrigerate for up to 3 days in an airtight container. Let come to room temperature and re-whip before using if chilled.

Notes

  • For a stiffer consistency (for piping), add up to 1/2 cup more powdered sugar.
