  • 1 whole chicken (about 4 to 5 pounds)
  • 3 tablespoons olive oil
  • 2 lemons (1 sliced, 1 juiced)
  • 4 garlic cloves (minced)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary (chopped)

  • 1 onion (quartered)
  • 4 sprigs fresh thyme
  • 4 sprigs fresh rosemary
  • 4 carrots (peeled and cut into chunks)
  • 3 celery stalks (cut into chunks)
  • 1 cup chicken broth

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F (220°C).
  2. Prepare the Chicken: Pat the chicken dry and mix olive oil, lemon juice, garlic, salt, pepper, oregano, thyme, and rosemary. Rub the marinade all over the chicken.
  3. Stuff the Chicken: Fill the cavity with lemon slices, onion, and fresh herbs. Place carrots and celery in the roasting pan with chicken broth.
  4. Roast the Chicken: Roast for about 1 hour 20 minutes until internal temperature reaches 165°F (74°C). Baste halfway through cooking.
