Instructions
- Preheat the oven and prepare the pan: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
- Cream butter and sugar: In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
- Add wet ingredients: Beat in the eggs, then add the lemon zest, lemon juice, and vanilla extract.
- Combine dry and wet ingredients: Gradually add the dry ingredients, alternating with the milk, mixing just until combined.
- Bake: Pour the batter into the prepared loaf pan and bake for 50–60 minutes until a toothpick comes out clean.
- Cool and glaze: Let the loaf cool, then drizzle with a mixture of powdered sugar and lemon juice.
Notes
- For a more intense lemon flavor, add ½ teaspoon lemon extract to the batter.
