For the Creamy Lemon Sauce:

  • 1 tablespoon butter
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup grated Pecorino Romano cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: Pound chicken breasts to even thickness. Prepare three shallow bowls with flour, beaten eggs, and a breadcrumb mixture. Dredge each chicken breast in flour, then egg, then breadcrumb mixture, pressing to adhere.
  2. Cook the Chicken: Heat olive oil and butter in a skillet over medium heat. Cook chicken 4–5 minutes per side or until golden brown and cooked through. Transfer to a plate and cover.
  3. Make the Sauce: Melt butter in the skillet. Add garlic, then pour in cream and chicken broth. Simmer and stir in Pecorino, lemon juice, lemon zest, salt, and pepper. Simmer until creamy.
  4. Finish and Serve: Return chicken to skillet or spoon sauce over plated chicken. Garnish with lemon zest or herbs if desired.
